Bolla Soave Classico Rétro not only draws on the style of the historical nineteen-sixties Bolla label, but it is also created using the procedures of a winemaking tradition worth saving. It comes from historical hillside vineyards, on mineral-rich volcanic soils. It is obtained from 100% Garganega grapes derived from natural selections generating the so-called "old vines", which produce straggly and light clusters with characteristic golden berries when ripe.
Tufaie takes its name from the Tufa Stone found in the hills surrounding the city of Verona, which were used to build its famed basilicas and ancient roman theater. The minerality expressed by the tufaceous marl of the ancient volcanic soils in the vineyards of the classic zone gives character to Tufaie, a "Soave Superiore." A prolonged fermentation period and extended yeast contact add to the wine's complexity and richness.

History
The cellar Bolla was born in Soave in 1883, made by Alberto Bolla. The first vintage of this bottle was the 1956. Heading the company, there was Giorgio Bolla, Alberto's son, «a man who foresaw the future 20 years in advance. Dinamic and with a strong attitude to viticulture. Memorable was the vintage 1957, when the best batches of wine of Valpolicella and Soave, had been bought by Giorgio Bolla and that striking news spreaded immediately in all the markets».
Regional Information
South facing at an altitude of about 350-450 metres above sea level. Soils of volcanic origin and rich in minerals, on steep slopes furrowed by ancient dry stone terracing.

Vinification Details
Grapes are picked and immediately undergo soft crushing with short cold maceration. Once alcoholic fermentation is finished, the wine is left on the lees until bottling, which is scheduled for the end of the winter.
