Vinification Details

The grapes are transported to the winery and gently bag pressed. The juice is then promptly clarified to maintain elegant, fresh flavours. 13% of the blend is fermented in French oak Cuves to enhance mid palate texture and complexity while the balance is fermented at cool temperatures in stainless steel with cultured yeast to emphasise the distinctive Awatere characters. The carefully selected components are then blended and filtered ensuring vibrant sub-regional characters are retained.
