Ingredients: 1 x pack Cauldron Marinated Tofu Pieces. 300g Thai rice raw weight, boiled following on pack instructions. 1 tbsp vegetable oil. 1 bunch spring onions, chopped into thin rings. 1 small red pepper, thinly sliced. 3 cloves garlic, crushed. 2cm root ginger, granted. 2 tsp chilli paste, more or less according to your heat preference. 3 tbsp light soy sauce. 1 lime cut into wedges, to garnish.
Method: Cook the Thai rice and set aside with a lid to keep warm. Heat the oil in a wok or large frying pan, add the spring onions, pepper, garlic, ginger and chilli paste and cook over a high heat for 2 minutes, then add the Marinated Tofu Pieces and stir fry for 5 minutes. Mix in the rice and soy sauce and toss gently together for a further 2 minutes. Serve straight from the wok with lime wedges to squeeze over. For a more authentic garnish, you can serve Nasi Goreng with the traditional omelette cut into fine strips and sprinkled on top.
