Recipe Suggestion
Harissa roasted vegetables
You will need...
2 tbsp Harissa paste
400g can chickpeas (drained)
600g chunky med veg pack
1tbsp olive oil
Chopped coriander (handful)
Couscous, to serve
Natural yogurt, to serve

Method
1. Preheat oven to 180°C/160°C Fan/Gas 4.
2. Mix together the vegetables, chickpeas, Harissa and olive oil until vegetables are well coated.
3. Place on a baking tray and roast for 20-25 mins.
4. Remove from the oven, finish with chopped coriander and serve with couscous and natural yogurt.
