Our corn tortillas are made in London from Mexican nixtamalized field corn that has been dried and milled into a flour, called masa harina. The dough is then rolled, cut into circles and baked on our machine 'El Monstruo'.
15cm tortillas are just the right size for large soft tacos, quesadillas, enchiladas, and huevos rancheros or crunchy totopos (tortilla chips).

Preparation and Usage

For soft tacos
Lightly toast each side of the tortilla in a hot pan (no need for oil) for around 20 seconds then keep covered until ready to serve.

For totopos and tostadas
Older tortillas are perfect for frying. For totopos, cut tortillas into triangles or keep whole for tostadas. Heat neutral oil in a high-sided pan or deep fat fryer and fry a single layer of tortillas, turning once, until crisp and just starting to colour. Drain on kitchen towel and sprinkle with salt before serving.

To cook from frozen, prise one tortilla off at a time and heat in a hot pan on both sides, or defrost in the packet overnight in the fridge.

Baja style aubergine tacos with Chipotle Vegan Mayo
Cut an aubergine into 2 1/2 cm wide finger length strips. Whisk together plain flour, salt and pepper, a little pinch of Cool Chile Chipotle Powder and very cold beer or cider until batter consistency. Dip the aubergine in the batter to cover then shallow fry in a few centimetres of very hot oil in a high-sided pan until crisp and golden, flipping halfway through. Drain on kitchen towel then serve on warmed tortillas with shredded lettuce or cabbage, Cool Chile Chipotle Vegan Mayo and a squeeze of lime.
