Hi - I'm Fred and I'm on a mission to deliver everyday fish that'll make your week. And pollock, for me, is seriously underrated. It's mild, so it loves punchy flavours. And it flakes really nicely.

It makes a lovely alternative to cod if you're making a fish pie, but I like it best in tacos. Simply fry it, flake it, add a squeeze of lime and place on corn tortillas with a bit of salsa. Yum.

Our pollock is wild caught in the deep waters of the Pacific Ocean. The team here work very closely with the MSC to make sure every pack of fish with my name on comes from a well-managed, sustainable fishery. And the fact that it's so healthy is just a bonus. The NHS recommends eating two portions of fish a week, but why stop there? I could eat it every day! And pretty much do.

Instructions

Oven cook - From Chilled. For 15 mins
1 Preheat oven to 200°C, Gas 6, Fan 180°C. Remove all packaging.
2 Loosely wrap fish in foil to create a foil parcel. Place parcel on a baking tray in the centre of the oven.
3 Cook for 13-15 minutes.
4 Make sure your fish is piping hot and don't reheat.
Cookers along with the thickness of the fish can vary a bit - this is just a guide. Be careful when opening your foil parcel as it will be hot.

Storage:
For use-by date see front of pack. Keep in the fridge, below 5°C. Once opened, cook and eat within one day. Don't eat after the use-by date. This fish has been frozen and carefully defrosted, but it's perfectly fine to freeze it one more time at home. If you plan to freeze it, do so ASAP and always before the use-by date. Don't refreeze once defrosted. Eat within a month and defrost thoroughly before cooking.
