Spanish Chicken Ingredients: 3 tbsp oil 8 skinless chicken portions 50g chorizo sausage, diced 2 red peppers, sliced 2 cloves garlic, crushed 175g long grain brown rice 1 Knorr Chicken Stock Pot 1 glass white wine 1 tbsp tomato purée 40g sundried tomatoes 2 tbsp fresh herbs, chopped
Preparation Time: 15 minutes Cooking Time: 45-55 minutes Servings: 4 Heat 2 tbsp oil in a large frying pan and fry the chicken and chorizo until golden brown, drain on kitchen paper. Fry the peppers and garlic in remaining oil. Stir in the rice, Knorr Chicken Stock Pot dissolved in 400ml boiling water, wine tomato purée and sundried tomatoes. Bring to the boil and place the chicken and chorizo on top with the herbs. Cover and simmer very gently for 45-55 mins or until cooked through.
