Al Pastor Quesadilla: loved for their melty, cheesy, marinated pork filling. We make ours with a fruity guajillo chilli and pineapple paste. They are best served with fresh coriander, lime and our salsa roja - either drizzled or as a dip! Preparation is quick & easy: 20 minutes, just 4 steps! 1. Prep: Fire up the oven to 180°C. Slice the pork and mix with the Las Chicas Al Pastor Cooking Paste (the smaller sachet) in a bowl - set aside and let the pork marinate while you prep the rest. If you have time - leave to marinate for longer for even fiercer flavours! Chop the coriander and quarter the limes – we’ll use these later. 2. Sizzle: Add a good glug of oil to a frying pan and cook the pork on a medium-high heat for about 4-5 mins, giving it a good stir as you go. Then turn the heat down and simmer on low for another 5-7 mins until cooked through. 3. Bake: Take the Las Chicas Tortillas out of the bag. On each half of each tortilla, place some pork, a good sprinkle of cheese and coriander, and fold in half. Place all the assembled quesadillas onto a baking tray and bake until gloriously golden, about 8-10 minutes. 4. Serve: Take the quesadillas out of the oven, and drizzle some line and the remaining coriander on top. Either top with the Las Chicas Salsa Roja, or serve the Salsa in a bowl on the side, and dip your quesadillas in.
