Recipes

Traditional Tiramisu
Serves 4

An indulgent Italian dessert with creamy coffee depth.

3 Medium eggs
250g Mascarpone
50g Soft brown sugar
15 Sponge fingers
80ml Strong cold coffee
2tbsp Marsala wine or amaretto
Cocoa powder for dusting

Serve chilled

1. Separate the egg whites from the yolks, keeping the whites.
2. Mix the yolks with the sugar until fluffy and airy.
3. Add the mascarpone to the sugar and egg yolks.
4. Whisk the egg whites until they are firm and hold their shape, then fold gently into the yolk mixture.
5. Mix the cold coffee with the Marsala wine or Amaretto.
6. Soak the sponge fingers with the coffee mixture.
7. Place half the sponge fingers into a rectangular dish so that they cover the base.
8. Take half of the mascarpone and egg mix and spoon over the sponge fingers.
9. Create a second layer of soaked sponge fingers and then spoon over the rest of the mascarpone mixture.
10. Chill in the fridge for at least four hours.
11. Just before serving, gently dust the top with cocoa powder.
