Carrot Cake
Makes 1 Large Cake Kit Contains
1. Cake mix
2. Frosting mix

In addition to the kit contents you will need:
2 Medium Eggs
45ml (3 tbsp) Vegetable Oil
75ml (5 tbsp) Cold Water
1 Medium Carrot (70g) Grated
140g Cream Cheese
2 x 7* Cake Tins, Lined with Baking Parchment

Oven 180°C / Fan 160°C / Gas Mark 4
1. Preheat oven to 180°C/Fan 150°C/Gas 4.
2. Empty the cake mix sachet into a bowl and add 45ml vegetable oil, 75ml water and 2 medium eggs.
3. Whisk for 1 min to combine the ingredients well.
4. Stir through the grated carrot.
5. Divide the mix between the 2 lined cake tins and bake in the oven for 20-25 mins until well risen and springs back to the touch.
6. Remove from the oven and allow to cool in the cake tins for 5 mins before transferring to a cooling rack.
7. Mix the frosting mix with the 140g cream cheese and whisk until a light fluffy frosting is formed.
8. Spread half the frosting on one sponge. Place the second sponge on top and spread the remaining frosting over the top of the cake.
