Lamingtons Named after Lord Lamington, the eighth Governor of Queensland, these coated cubic sponge cakes are an iconic Australian treat.
The first Lamington recipe is thought to have been published in december 1900 and they've grown so much in popularity since, there's now a national Lamington day in Australia every year to celebrate them!
