Boil - From Ambient. 40 Mins No need to soak. Rinse thoroughly before cooking. Place 100g of lentils into a large saucepan with 500ml of water. Place the pan on the medium hob over a high heat. Bring to the boil for 10 mins. Reduce the heat to low and simmer for 30 mins, until the lentils have softened but are slightly firm to the bite. Drain thoroughly, rinse and use as required. Do not reheat.

Ingredients 200g M&S Organic Green Lentils 500ml M&S vegetable stock 3 Mixed peppers, deseeded and diced 3 Large organic courgettes, round sliced 4 tbsp olive oil 500g M&S halloumi cheese, sliced 3 tbsp balsamic vinegar Salt and pepper
Method 1. Bring the lentils to the boil in a pan with the stock and boil for 10 mins then simmer for 30 mins until tender. Drain thoroughly. 2. Preheat the oven to 200°C (fan 180°C), Gas Mark 6. 3. Meanwhile, coat the peppers and courgettes in 1 tbsp olive oil and season with salt and pepper. Cook on a baking tray in the centre of the preheated oven for 25 mins, until lightly browned. 4. Heat 1 tbsp olive oil in a frying pan and fry the halloumi on each side until golden brown. 5. Mix the lentils, roasted vegetables, vegetables, 2 tbsp olive oil, 1 tbsp balsamic vinegar in a bowl. To Serve: Divide between 4 bowls and add halloumi.
