Instructions
Boil - From Ambient. 10 mins for 2 servings 1. Bring 150ml water to the boil, add 100g couscous. 2. Stir and simmer for 5 mins. 3. Drain, cover and stand for 5 mins. 4. Separate grains with a fork before serving.; Cooking Instructions - General. Serving size: 50g portion/125g when cooked Do not reheat.; Other - From Ambient. Soak: 8-10 mins for 2 servings 1. Place 100g couscous and 150ml boiling water in a heatproof bowl. 2. Cover and stand for 8-10 mins. 3. Separate the grains with a fork before serving

Ingredients - 120g Couscous - 1 Small Red Onion, diced - 1 Medium Courgette, diced - 1 Large Yellow Pepper, deseeded and diced - 1 Small Aubergine, diced - 100g Cherry Tomatoes - 1 Tbsp Olive Oil - 4 Tbsp Sundried - Tomato Paste - Salt and Black Pepper - 1 Tbsp Fresh Basil, diced
Method Preheat the oven to 200°C (Fan 180°C), Gas Mark 6. 1. Cook the couscous to the on-pack instructions, then drain and set aside. 2. Mix all the vegetables with the oil and 2 tbsp of the sundried tomato paste in a large bowl and season to taste. 3. Lay out on a baking tray and roast for 20 mins. 4. Stir the roasted vegetables, basil and the remaining sundried tomato paste into the couscous and serve warm. Great accompaniment to grilled lamb or vegetable kebabs.
