Hob - From Ambient. To make the best Giant Couscous, gently fry 100g of Couscous for 2-3 minutes in a little olive oil. When golden brown, add 200ml of cold water to the pan and stir continuously until all of the water has been absorbed. Add more water as necessary until the Couscous is soft. This should take approximately 16 minutes. Serve straight away. For a quicker method, empty the Couscous into a pan of boiling stock. Simmer for 6-8 minutes, stirring occasionally. Drain using a sieve and serve. This method is great for using in salads or when you are short of time.

Get creative For an alternative risotto: cook the giant couscous in stock with some seasonal green veg. Stir in a dollop of pesto and top with grated parmesan. You can also infuse this couscous with fresh thyme and lemon for a delicious side dish, or use it as a base for a speedy salad.
