How to cook with Cavolo Nero
The small size leaves are tender enough to be enjoyed raw, with their central stalk finely chopped, rubbed with olive oil and flaky salt and tossed through salads. To cook, shred, blanch, then tossed through chilli oil. Finely chopped, stems and all, and stirred into broths.
