Blended from chardonnay, pinot noir and pinot meunier grapes all grown in our own vineyards, our Classic Cuvee has a generous creamy texture which epitomises the harmony of flavours that a blend of these three grapes can bring.
Tasting Notes
Delicate bubbles pervade this light golden wine, filling the nose with aromas of lemon tart, biscuit and floral notes. The palate has a rounded mouthfeel, echoing the nose with flavours of lemon tart and pastry. The citrus character reappears on a long and fruity finish.

Our numerous international awards have proved that England can indeed produce wines of Grande Marque Standard. Our vineyards sit on the type of soil found in Champagne, which dips under the channel and reappears in Sussex.

Storage
Sparkling wines and Champagne should always be stored in a cool and dry place away from light and heat sources. The ideal temperature for storage is 13-15 degrees C.
Warning: Sparkling wines contain high natural pressure. Do not allow bottles to get warm. Chill bottle before opening and avoid shaking. Point bottle away from others and yourself when removing wire, hood and cork. Hold the cork firmly and twist out slowly by hand. Never in any circumstances use a corkscrew to open.

History
The Nyetimber estate has a number of landmarks in its history. Its earliest beginnings saw it recorded in the Domesday Book in 1086. Then there was the planting of the first vines, almost 900years later. For 30years Nyetimber has had a single aim: to make the finest English sparkling wine to rival the best in the world, including Champagne. A true pioneer, Nyetimber was the first to craft English sparkling wines exclusively from the three celebrated grape varieties: Pinot Noir, Pinot Meunier & Chardonnay
Regional Information
Nyetimber owns one hundred percent of our vineyards and all of our wines are produced from the 220 hectares we have planted at the best sites in West Sussex, Hampshire and Kent. Each Vineyard was deliberately selected to be south-facing with either sandy or chalk soils. All are located in sheltered positions affording them protection from the coastal winds. Prior to harvest, the grapes are tasted to ensure the best flavour development before picking and every grape is picked by hand at the optimal time.

Vinification Details
Each vineyard parcel is treated uniquely, from picking to gently pressing to vinification in separate tanks. Such attention to detail allows for a wonderful diversity of base wines when blending decisions are made in the spring following the harvest. All wines are crafted according to the strict rules of the traditional method, aged for extended periods of time on the lees and given sufficient post-disgorgement time before release.
