Butternut connoisseurs know that the best butternut is the largest fruit with a large neck. This is the Ocado roasting squash, with a proportionally smaller seed cavity. It has a sweet, nutty taste and as it matures it become sweeter and richer.

Serving Suggestions
Butternut can be roasted, toasted, pureed or mashed and can be used in casseroles, breads and muffins. The seeds can be eaten raw but are usually toasted, and the skin is also edible and will soften when roasted.

Store in a cool, dry place.

Instructions

1. Pre-heat oven to 180ºC.
2. Peel and cut squash into quarters.
3. Place the squash in a roasting tin, cut sides up.
4. Drizzle over olive oil and dot with butter then season to taste.
5. Roast in the oven for 40-50 minutes, or until the squash is tender and has turned golden-brown in places.
