History

Purato is a pure reflection of the island of Sicily. It is an expression of nature, an attempt to capture the beauty of the rugged landscapes and a devotion to sustainability in every aspect of production that results in authentic wines with purity of flavour.

Regional Information

The Nero d'Avola grapes are grown in organic vineyards on hillside slopes in the Trapani area of the island. Trapani is north of Marsala, to the extreme west and is an area perfect for organic grape production.

Vinification Details

The grapes are harvested in early October. In the winery, they are very gently pressed after de-stemming. During the early stages of fermentation, the wine is regularly pumped over in order to extract the right amount of colour and soft tannins. Once fermentation is finished, the wine is racked off and malolactic takes place.
