A mix of simple and subtle fine ingredients, in particular fresh butter, the dough for these biscuits is traditionally worked in a kneading trough. The biscuits are then stamped and cut into rounds before being baked slowly and controlled on plates in the oven. The biscuits are selected and packaged by hand.
