Sausage, Tomato & Spinach Pasta Serves 4 Hob 30 mins
Ingredients 3 tbsp. olive oil 1 pack Richmond Meat-Free Sausages, chopped into pieces 3 garlic cloves, thinly sliced 1 red chilli, sliced 150g cherry tomatoes, cut in half 1 tin of plum tomatoes Pinch of dried oregano 1/2 pack of basil leaves, picked and torn 400g short pasta e.g. penne 150g chopped spinach 75g grated Parmesan (optional) Salt and pepper to taste
Method 1) Boil a large pan of salted water and heat a large frying pan on a medium heat. 2) Add the pasta to the water and cook according to instructions. Drain and set aside when cooked. 3) Whilst the pasta is cooking add the olive oil to the frying pan and then add the sausage chunks and brown for 2-3 minutes. 4) Add the garlic to the sausages and cook for a further 2 minutes. 5) Add the cherry tomatoes, chilli and oregano then tip in the tin of plum tomatoes. Simmer for 10 minutes until the tomatoes begin to break up in the sauce. 6) Mix the pasta, basil and the chopped spinach into the sausage and tomato sauce. Season to taste. 7) Add some grated Parmesan, serve up and enjoy.
