Tasting Notes
This
wine is a bright pale yellow in the glass with some green hints. It is very
complex on the nose with notes of citrus, white flowers, lime, and mineral
aromas. This wine has an upbeat freshness. On the pallete this Picpoul has a
lemony zing and subtle flavours of floral, ripe, juicy pears. The finish is
bone-dry and crisp with a zippy balanced acidity.
Serving Suggestions
To be
served at 10°c - 12°c. To accompany fine seafood such as oysters, grilled
fish, pastas with creamy sauces, sushi or simply enjoy as an apperitif.
Regional Information
Ancient terraces called Costières dating from the Pliocene with a geological structure of red marls, sands, gravels, molasses with limestone slabs facing the pond of Thau and the Mediterranean sea.

Vinification Details
Grapes
harvested at 12° - 13° maturity. Skin maceration for several hours. Selection
of drained juice after undergoing pneumatic pressure. Cold double
decantation. Thermoregulated fermentation at 16°. No malolactic fermentation.
