We would love you to try this exciting blend of our pioneering organic Viognier and the local Sicilian Grillo grape. Refreshingly zesty, we recommend drinking it chilled as an aperitif, with grilled vegetables, or seafood.
Santa Tresa's organic philosophy encourages local wildlife: the fox is a welcome visitor to our estate, hunting wild rabbits and balancing our very own "ecosystem"
At Santa Tresa we respect and encourage nature which in return allows us to produce great wine that really is more than just organic, it's also unique!

Vinification Details
Both varieties are vinified in a similar way. We chill the grapes overnight in a refrigerated room to lower the temperature to 6-8°C, thereby protecting the aromatic characteristics of the grapes. The following day, grapes are gently destemmed and softly pressed. The must remains in a tank for one night at a temperature of around 10°C, allowing the natural sedimentation of all the solid particles to occur. Wine is moved into a stainless steel tank, where it ferments at 17-19°C for 10-12 days.
