Full Product Name: Fresh pasteurised homogenised semi-skimmed goats' milk
Storage: Use by: see top of carton. Keep refrigerated at 2-5°C. Consume within 3 days of opening and no later than the use by date. Store upright. Suitable for home freezing. Freeze as fresh as possible. Once defrosted, please follow storage advice above.
Ingredients (serves 4) 1 red onion, chopped 250g bacon, chopped 50g St Helen's Farm goats' butter 1 tablespoon olive oil 300g risotto rice 1-2 cloves of garlic, crushed 1 courgette, chopped 200ml hot stock (chicken or vegetable) 700ml St Helen's Farm goats' milk, hot 200g cherry tomatoes, halved 50g St Helen's Farm goats' cheese, grated freshly chopped herbs
Method Cooking time: 30-40 minutes In deep frying pan, heat butter and oil and fry the onions and bacon for 5 minutes. Add rice, garlic and courgettes and stir until coated. Pour in stock, simmer, stirring until absorbed. Gradually add milk, a ladle at a time and stir until absorbed. Repeat until two ladles are left, then add the tomatoes. Add remaining milk until almost all is absorbed (approx 20 minutes). Rice should be creamy and firm, but not hard. Serve immediately sprinkled with the cheese and herbs.
Notes: Risotto's are quick and easy to make. Try one with your favourite vegetables or use a little less stock or milk to make way for a dash or two of wine.
