The secret to a perfect Victoria Sandwich: Sieve 175g self-raising flour & 1tsp baking powder in a big bowl. Then add... 3 fresh eggs + 175g caster sugar + 175g Stork baking margarine + 1/2 tsp vanilla extract Whisk until silky smooth and divide into two 18cm-20cm tins. Bake at 180°C, 160°C fan, Gas mark 4 for 30mins or until golden brown. Allow to cool before adding your favourite filling & a dusting of icing sugar. Share with family or friends and enjoy
