Most Earl Greys use a poor quality base tea and Load on bergamot flavouring, which is like palming yourself off as landed gentry when all you own is a Barbour jacket. We use the finest Darjeeling from the foothills of the Himalayas and add the zesty, citrus bergamot and lime flavours of the mediterranean to create something altogether more elegant. The blue cornflowers? Well, they just look so pretty. Louise
Our tea temples: We use quality whole leaf only, not the dust found in regular tea bags; whole leaf is best. A tea worthy of worship belongs in our biodegradable "tea temple" - our spacious, transparent mesh bag allowing maximum room for perfect infusion.

One tea temple per person, infused in boiling water for at least 3 minutes. Don't rush - just relax, watch the leaves and petals unfurl. Try this with a slice of lemon
