Recipes

Recipe Suggestion
Chicken & Baby Sweetcorn Thai Green Curry
Serve 2-3
You will need:
1 tbsp oil
300g chicken or tofu, diced
And/Or Chopped seasonal vegetables
1 sachet green curry paste
200ml Thai Taste Coconut Milk
1tsp Thai Taste Fish Sauce
6-8 baby sweetcorn, halved
1/2 jar Thai Taste Pea Aubergines, drained (optional)

Cooking instructions:
1. Heat the oil in a deep frying pan.
2. Add green curry paste and 1tbsp of coconut milk and mix until the aromas are released (3 mins).
3. Add the chicken/tofu, stirring to coat with the paste (about 3 mins).
4. Stir in the rest of the coconut milk, optional vegetables and fish sauce and simmer until the meat is cooked (about 5 mins).
The sauce should not be too thick.
5. Add the pea aubergines and baby corn and continue to simmer for a further 2 mins.

Serve with Sticky Rice or Rice Noodles. Garnish with fresh coriander and a squeeze of lime.
