Recipe Suggestion Beef & Baby Sweetcorn Thai Red Curry
Serves 2-3 You will need: 1 tbsp oil 300g beef or tofu, cut into strips And/Or chopped seasonal vegetables 1 sachet red curry paste 200ml Thai Taste Coconut Milk 1tsp Thai Taste Fish Sauce 6-8 baby sweetcorn, halved 1-2tsp or 4-5 leaves of Thai Basil, or fresh basil
Cooking instructions: 1. Heat the oil in a deep frying pan. 2. Add red curry paste and 1tbsp of coconut milk and mix until the aromas are released (3 mins). 3. Add the beef/tofu, stirring to coat with the paste (about 3 mins). 4. Stir in the rest of the coconut milk, optional vegetables, fish sauce and palm sugar and simmer until the ingredients are cooked (about 5 mins). The sauce should not be too thick. 5. Add the baby corn and basil and continue to simmer for a further 5 mins.
Serve with Sticky Rice or Rice Noodles. Garnish with fresh coriander and a squeeze of lime.
