Butter chicken is definitely India's favourite curry. It is said to have been conceived by Moti Mahal, one of Delhi's oldest restaurants. It combines smoky moist tandoori chicken, stirred into a mildly-spiced creamy, tomato curry sauce, and finished off with a generous knob of creamy butter.
It is still a restaurant dish but with The Spice Tailor's Classic Butter Chicken sauce it is now easy to cook and enjoy at home.

Bits to buy:
250g skinless, boneless chicken, paneer, seafood, vegetables, lamb or pork
From your cupboard:
1 tsp vegetable or olive oil
For extra heat, simply add the chilli

Classic butter chicken
Recipe
Preparation: cut the meat, fish/seafood or vegetables into generous pieces
1. Heat 1 tsp of oil in a small pan, add spices and cook for 20 seconds
2. Add the meat or vegetables and brown lightly before adding the base sauce. Simmer for 1-2 minutes
3. Stir in the main sauce and fish/seafood (if using) and simmer for another 3-5 minutes or until the meat or other protein is cooked through
Serves 2-3 with naans, rice or parathas

Tailor to Taste
Use these handy tips to customise your dish:
- Add a knob of butter for that proper restaurant experience
- Try adding some large cubes of red onion and green peppers in with the protein for crunch and flavour
- For a smoky flavour, marinate skinned chicken breast or thighs in the base sauce, then grill until charred in places, and finish cooking in the remaining sauce.
