The flavours of this curry are savoury, rich and hearty, leaving you with a homely feeling of comfort. As the warming and nutty spices begin to sing on your palate, the true complexity of this curry comes to life. Bits to buy: 250g Skinless, boneless chicken or paneer, seafood, vegetables 1/2 Green pepper (chunky dice) 1/2 Medium onion (chunky dice) From your cupboard: 1 tbsp Vegetable or olive oil For extra heat, simply add the chilli
Preparation: Cut the meat, fish/seafood or vegetables into generous pieces. If you don't like whole spices, powder these in a pestle and mortar and add them in at the end of step 3. Alternatively, if you left the spices whole, remove them with a spoon before serving. 1. Heat 1 tbsp oil in a small pan, Add the spices and cook for 20 seconds, Then add the diced onion and cook for a minute. 2. Add the meat or vegetables and brown lightly before adding the base sauce. simmer for 1-2 minutes. 3. Add the diced pepper, Then stir in the main sauce and fish/seafood (if using) and simmer for another 3-5 minutes or until the meat or other protein is cooked through. Serves 2-3 with naans, rice or parathas. As appliances may vary, these are guidelines only. Tailor to taste Use these handy tips to customise your dish: - Add a handful of halved baby tomatoes for a change. - For a creamy tang stir in 2 tbsp natural yogurt. - Marinate skinned chicken thighs in the base sauce, grill for 8 minutes until charred, shred or chop up and finish off in the main sauce for a great smoky flavour. - Add fresh chopped coriander before serving.
