Sauce Facts
Korma was originally brought to India by the Mughals in the 15th century and mostly referred to a meat slowly braised in a spiced yoghurt sauce.
Once in the Royal Court, it was dressed up to show visitors the wealth of the palace.
Sumptuous ingredients such as cream, nuts, saffron and dried fruit were added to bring extra glamour to the banquet.
The Delicate Korma Curry is now a British favourite but speaks of those distant regal meals.

Instructions

Delicious with meat or vegetables
Preparation: cut the meat or vegetables into generous pieces, or de-vein the prawns.
1. Heat 1 tsp of oil in a pan, add the spices and cook for 20 seconds
2. Add the meat (or prawns or vegetables) and brown lightly before adding the base sauce. Cook for 2-3 minutes.
3. Stir in the main sauce and simmer for 3-5 minutes or until the meat (or prawns or vegetables) are cooked through.
Serves 2-3 with rice and roti
Tailor to Taste™
Use these handy tips to customise your dish:
Try with paneer cheese.
Add ground almonds for a nuttier taste.
If you have time, marinade the chicken or meat in the base sauce for an hour to allow the flavours to tenderise and permeate the meat.
Dress it up by garnishing with almonds, pistachios, raisins, dried figs or apricots.
Finish with a little saffron or coconut cream.

Usage:
2-3 Servings

Recipes

3 simple steps
Heat spices
Add fresh ingredients and base
Stir in sauce and simmer

Bits to buy:
250g skinless, boneless chicken, or paneer, seafood, vegetables, lamb, pork or eggs

From your cupboard:
1 tsp vegetable or olive oil
For extra heat, simply add the chilli

Recipe
Preparation: cut the meat, fish, paneer or vegetables into generous pieces or halve your boiled eggs.

If you don't like whole spices, powder these in a pestle and mortar and add them in at the end of step 3, alternatively if left whole remove them with a spoon before serving.

If you are using fish, add this with the main sauce in step 3.
1. Heat 1 tsp of oil in a small pan, add the whole spices and chilli (if using). Cook for 20 seconds
2. Add the fresh ingredient and brown lightly. Add the base sauce and cook for 1 minute over a highish heat
3. Stir in the main sauce, and 2tbs water, or as needed, and simmer until the meat, fish, paneer or vegetables are cooked, for around 3-6 minutes
Serves 2-3 with The Spice Tailor Naans, rice or parathas

- For a change of flavour, add a handful of soft herbs into the sauce or for more tang some halved cherry tomatoes
- If you have time, marinate the chicken or meat in the base sauce for an hour to allow the flavours to permeate the meat
- Dress it up by garnishing with nuts, dried fruits, saffron and/or crispy onions
