Sauce Facts
The Portuguese colonised Goa for 450 years and Goans soon became adept at harmonising their flavours with local ingredients. Many of the dishes we recognise today as Goan have a strong Portuguese influence. In fact, these sea-farers brought with them many of Goa's prized ingredients including chillies from South America.
Our Goan curry reflects the flavours and history of this lush Southern Indian state, with a special blend of spices tomatoes, vinegar and of course chillies; it is unapologetically Goan and delicious!

- For best results and a vindaloo-like dish, cook with pork shoulder and cook until meltingly tender, for around 50 mins
- For a fantastic fish curry, add firm white fish and coconut milk/cream
- Add 2tbs desiccated coconut for a coastal coconut bite

Bits to buy:
250g skinless, boneless chicken or paneer, seafood, vegetables, lamb, pork or eggs
From your cupboard:
1 tsp vegetable or olive oil
For extra heat, simply add the chilli

Fiery goan curry
Recipe
Preparation: cut the meat, fish/seafood, vegetables or paneer into generous pieces or halve your boiled eggs
If you don't like whole spices, powder these in a pestle and mortar and add them in at the end of step 3, alternatively if left whole remove them with a spoon before serving.
1. Heat 1 tsp of oil in a small pan, add spices and cook for 20 seconds
2. Add the meat, vegetables or paneer and brown lightly before adding the base sauce. Simmer for 1-2 mins
3. Stir in the main sauce and fish/seafood (if using) and simmer for another 3-5 minutes or until the meat or other protein is cooked through
Serves 2-3 with The Spice Tailor Naans, rice or parathas
