Turf & Clover Topside Roasting Joint 


Our easy carve topside joint is matured for a minimum of 21 days and hand trimmed by our master butchers to deliver a tender, succulent richly flavoured joint.  


Our Topside joints are cut from the hind quarter inner muscle, its a naturally lean and tender cut that delivers a succulent mouth-watering eating experience and the juices will also add a real depth of flavour to your gravy should you choose to use them.

For best results cook to medium rare, slice thinly, add the juices to make the perfect gravy, drizzle and enjoy.  This easy to carve topside roasting joint is the perfect addition for your family Sunday roast or a midweek treat.

Storage

Keep refrigerated 0°C to +5°C. Once opened, use immediately. Do not exceed the Use By date. Suitable for freezing. Freeze on or before Use By date. Use within 1 month. Defrost thoroughly before cooking and consume on day of defrosting. Do not refreeze. 

Preparation and Usage

Wash hands, all surfaces and utensils after touching raw meat. Keep raw meat separate from cooked foods.  
Remove all packaging. 
Oven:
Rare: 18 minutes per 500g
Medium: 22 minutes per 500g
Well done: 33 minutes per 500g


Allow the product to stand at room temperature for 30 mins before cooking. Preheat oven and baking tray. Oil and season surface of meat. Place in oven at 240ºC / Fan 220ºC / Gas 9 for 25 mins. Remove joint from oven, add 4 tbsp of water and cover joint loosely with foil. Reduce temperature to 180ºC / Fan 160ºC / Gas 5 and continue to cook for remaining time. For rare, cook for 18 mins per 500g. For medium, cook for 22 mins per 500g. For well done, cook for 33 mins per 500g.


Baste joint occasionally during cooking. Remove from oven, cover with foil and rest for 15 mins before carving. For best results, carve thinly and drizzle over juices in roasting tray, or use juices to make a gravy.
