Mango and Lime Cake with Drizzle Icing Preparation time: 15 minutes Cooking time: 35-40 minutes Ingredients 225g unsalted butter, softened 225g caster sugar 4 medium eggs 225g self raising flour Grated rind 1 lime 50g Whitworths mango, chopped into small pieces Icing: 125g icing sugar Juice of 1 lime plus grated rind to decorate 10g Whitworths mango for decoration
How to make Step 1 - Preheat the oven to Gas 4, 180°C. Grease and line the base of a 20cm square cake tin with greaseproof paper. Step 2 - Cream the butter and sugar together until light and fluffy. Add the eggs one at a time and beat well after each addition (add a tsp flour if the mixture curdles). Step 3 - Fold in sieved flour, grated lime rind and mango and place into the tin, level the top and bake in the oven for 35-40 minutes until well risen and golden (test with a skewer, if it comes out clean the cake is cooked). Cool and turn out. Step 4 - Mix the icing sugar with the lime juice to form a runny icing and spread over the cake, letting it drizzle down the sides. Decorate with mango pieces and lime rind.
