Preparation and Usage
Our vine ripened tomatoes are sweet and juicy enough to be enjoyed raw. Simply wash, slice and toss into salads with your favourite ingredients. They combine especially well with cucumber, avocado, rocket, basil, chilli, mozarella, feta and yoghurt. Besides having them raw, tomatoes are also great for cooking with; in fact, their sweetness intensifies upon cooking. Simply drizzle halved tomatoes with olive oil and roast at 160C for an hour, or until the skins blister and collapse. Feel free to throw in a few bashed cloves of garlic, a few sprigs of thyme, and other summer vegetables like courgettes and aubergines. Tomatoes can also be added towards the end of a stew, or simmered slowly to make a fresh tomato sauce.
